    When my children were growing up, I canned and preserved everything I could get my hands on. Raising 4 boys mostly on my own made it a necessity. Living in the Pacific Northwest, there were many farms. After the harvest was over, you could go behind them and glean what was left for free. I had my own garden as well. My dad had apples and peaches, grapes, berries. I didn’t have much money but my kids were never hungry

    Loved this video! When my children were at home we canned and froze so much food at the end of summer. We were always happy to have food that tasted fresh in the middle of winter. 🌸. You brought back so many good memories. Thank you. 🌸

    I've done both hot water bath and pressure canner. I like both methods - if you're using pints, you can stack 2 layers in my pressure canner. As far as a pressure canner being a timer saver- no, not really. Pressure canner is supposed to be a safer method, but I've never had an issue with either method. Mary's correct, common sense is key.

    Retired hospital dietitian here and 40 year canner. The difference between water bath canning and pressure canning is not time or convenience it is safety. Water boils at 212 degrees so water bath canning is perfectly safe for acidic foods like fruits, jams and and tomatoes. Low acid foods like green beans, potatoes and all protein foods such as meats and dry beans must be pressure canned to reach a higher temperature as botulism spores are only killed at 240 degrees. Botulism spores are anaerobic meaning they grow when they have no oxygen. You could water bath green beans or potatoes all day and still only be at 212 degrees and never be safe because once they are sealed the botulism can start to grow and it is tasteless and odorless.

    Love this video! My momma taught me as a young girl how to use and respect a canner and when I got married I bought one similar to yours. I used it for many years and did the water bath as well. Seeing all the fresh fruits and vegetables makes me crave those gardening days again! Thanks for sharing !

    The first time I pressure canned I started with water!😂😂 That was last year. Now I feel a little more practiced and taught my daughter in law how to pressure can. She's so excited. I just got a bushel + of apples, so I'll be making applesauce, one our faves.

      You can hot water can apple sauce. If you don't have a big pot, you can use your pressure canning pot, just don't seal it. Hot water canning is a bit faster since you don't have to wait for the pressure canner to cool down and depressurize. 💖🌞🌵😷

    What I like about the pressure canner is that the steam pressure inside gets so smokin' hot, that you can safely pressure can meats with no worries of spoilage.
    Way hotter than you can get on a water bath or oven.

    Mary I bought a pressure canner like yours this year. I don't know why but the thought of canning in it scares me. I grew up using a pressure canner since I was 11 years old. I stopped using one 30/40 years ago. Watching you gives me confidence to give it a try. My sister used to blow the plug thru the ceiling, that is why mom had me cook in it. She is 5 years older , she would not put enough water in it for the time. I complained to her that she was doing it on purpose to get out of work. I am done canning this year but I will get back to using the canner again. Mom canned everything. Thanks for the video & listening.

    Mary I grew up like you in that my family canned constantly every summer. We always use the cold bath method occasionally we did strawberry jam in the freezer with wax seal. We canned corn, green beans, tomato sauce, diced tomatoes, tomato juice peaches, pears, apples, and pickles. We never canned meat so we never got a pressure canner. I love your Channel and I would never criticize you on anything you do shame on anyone who does

    One tip, notice how your green bean jars are only half full? Pack you green beans a little tighter in the jar before you can them. Or better yet, do what my mom and grandma used to do, cook your beans first so they will be "pre-shrunk" before placing in the jars. You will get more beans per jar and less empty space on your shelf. Love your videos.

    Always enjoy watching all of your videos. Growing up we ate as you did and do, and we were very much removed from any nearness to the Amish or Mennonite heritage. Shows that we all cross over in life. Of course I am from Ohio maybe that is it!

    I totally understand about the intimidation factor of using a pressure canner. I've owned a brand new All American pressure canner since 2020 that I haven't ever even used once yet because I'm a bit afraid of it. I hope to finally try it over the winter this year. From what I understand the 'pressure' canning of certain types of foods is more for safety than for the speed. I'm going to begin by trying water bath canning. Once I've mastered the water bath canning then I'll say a prayer 🛐 and try the pressure canning of some meat.

    Pleasantly surprised to see your video tonight I myself just started getting into canning in the ripe old age of almost 60. I have to agree with you. No pressure canning for me. I’ll stick to water bathing. ☺️

    I absolutely love watching you preserve all the things you do.
    We don't really preserve food in the uk as such,we do freeze food but not so much can food.
    It looks so rewarding watching the shelf fill up and know that you have lovely fresh food available throughout the winter months.
    Just on observation alone id say the water bath method looks quicker & less faff.

    Oh my, so wish I had learned this so many years ago, my family didn't do canning. I do freeze my blueberries like you though and then put into baggies. That pie just looks so Delicious 😋 When I was around 12 years old one year my Mom did Apple Jelly. Remember using a pillowcase and just squeezing the liquid from it into jars, what a job that was, squeezing and squeezing. Oh, then poured wax on top, after they cooled I guess. We had several apple trees. That's the only time I remember. This was a nice video, Thank you.

    I prepare my beans just like that Mary (taking only the head of the bean and leaving the tail)😊! Also I add a tablet of zinc to the jar for a greener bean! Great video!

    I loved watching you can. I too remember growing up watching my mom can peaches and pears. That's the only things she did. But she did a lot of canning. I used to do peaches after I got married, but stopped when my husband was diagnosed with diabetes. I have canned pickles, Dilly Beans, Spaghetti, Salsa, applesauce, corn and cubed tomatoes. Canning is a work of art. And I'm afraid a lost art. Fruit and vegetable's are beginning to cost a lot these days. By the time you purchase all the other ingredience's, its pretty spendy. But the taste is SOO much better. That's why I can. My grand daughter just moved to our town to go to the University here, and comes over every Sunday afternoon to get a bite to eat and to zoom with our whole family each week. (We started Zoom during Covid to have our own church each Sunday.) Once churches were open after covid, we found we love meeting each Sunday just to chat.) The last 3 weeks when she comes over, she loves my Salsa and enjoys eating salsa while were talking to the kids and grandkids. I wonder if she eats it during zoom to make everyone jealous!! :0) Silly girl. Your family is blessed to have canned fruit and vegetable's throughout the year. I love this time of year and I love to take the bounty we are blessed with and can something we can enjoy through the year.

    I loved this video Mary, it brought back so many memories of my Momma And Grandma canning. I do very little of it now, I am passing most of my canning stuff to my Granddaughter. She is wanting to learn to can. Your videos are so very helpful. 😊

    hi mary so nice that you came up with this video, this is the first year that I started canning vegetables and I have been so excited that my place to store them is already full 🤣. I put it in a pan with boiled water, that works fine for me and we have not gotten sick from the food yet, not even the pots that also contain meat such as pea soup (a very famous Dutch dish). thank you for letting me take a look in your kitchen.     I just used my new pressure canner yesterday with bean soup and it was a little nerve wracking but it was mostly a success, a couple jars leaked but I might have overfilled them, I figured it was a good thing to try first because it wasn’t a costly food item. I would have hated to ruin good produce, it was a good learning experience and I intend to do more

    What a beautiful thing it is to lay in provisions for the dark months! Yours are such a gorgeous array of colors with the red tomato juice, green beans, golden peaches, and indigo berries. I've never canned a thing in my life, but I do eat peaches canned in white grape juice, which I find plenty sweet enough and not so heavy as a syrup.

    I loved this video! We have been canning. We have put up green beans, corn, tomatoes, butter beans. Just dug our potatoes on Saturday and will share them with my mom and daughter. Getting ready to make Tabasco sauce. Make it every year and it’s a hit. Mary, that dessert looked delicious!! You never cease to amaze me! ❤️

    I remember for first and only attempt at canning. My mom always canned and had a huge garden. When I got married and after a couple of years decided to try a garden. I was about 8 months pregnant when it was time to can my beans. Little did I know I was getting a bladder infection at the time. The canner made me extremely nervous and I wasnt feeling well at all. Ended up going to the ER to get the bladder infection under control. I never had the urge to can again!! All of your canned goods look so good though - great job and the dessert looks yummy!!

    What an amazing luncheon with family! Everything looked delish! I’m actually scared of a pressure cooker. I always use the hot water bath! The green beans turned out so pretty! My “Mother in Love” and I use to can strawberry and peach preserves every summer.
    Then, in the fall we would do apple butter. She lived with us these past 6 years and we so enjoyed canning together. She passed away this past spring and I haven’t canned at all. I enjoyed watching your Mom joining you for canning! What a prosperous day!

    Tradition is one of the most important things in our life when people start changing the way we do It is when we start making a mess and the way that we know how to do them. Keep canning the same way you always have And when your blueberries marmalade put the lid on them when it’s hot so they will seal if you let it cool with the lid off bacteria gets in there just do what you know always don’t listen to people they don’t know anything about it and they have an opinion without ever done it. Thanks for being you. Don’t ever change.

    I love preserving my harvest. I do hundreds of jars a year. I agree with you about the time difference. I only use the pressure canner for meats. The water bath I use for vegetables. I have been canning for over 50 years using only the waterbath but I never canned meats three years ago I wanted to can meat, so purchased a pressure canner. I put 3 tbs of vinegar in my canning pot of water. This helps to keep the jars cleaner and the white mineral deposits from sticking to the jars.

    Yes, the pressure cooker does take longer, but I believe it is safer as far as not getting bacteria in the green beans. I have read, but not tried, that if you add 50 to 100 mg of zinc, the beans will stay green and not change the taste. The NOW brand was recommended. Also, if you pack your jars really full with green beans you will end up with a full jar. When I use my pressure cooker, I usually stay nearby as it too makes me a little nervous.

    Mary this video brought back memories of days years ago when I canned some of the same things you were doing. I remember when I was growing up my mom and I would canned beans out side over a wood fried in a wash tub. My mom had a pressure canner but when you had as many jars of beans as we had, it was quicker to use the tub method. I am not sure how many you could put in a tub , but I think it was 16 or 18 quart jars you could do at a time. I can still remember how good those beans tasted in the winter time. I always loved your videos because so many of them take me back to wonderful times of my life. Thank you for sharing. Ann from Va.❤

    I love watching canning videos! I’ve never seen green beans put up like that before. I’ve canned my beans in a pressure canner for forty-three years and have never heard of putting them in a water bath. It DOES take more time because of the pressure canner. I guess I wonder how a low acid food like green beans would not go bad. Do you have a video showing how you and your mom did it with a water bath method? Like you said,everyone has their own way of preserving, but I enjoy learning new ways to can from others-especially if it saves time. Canning is something that I really enjoy doing. In such a busy, chaotic world, spending the day putting food up is so relaxing and satisfying.     Mary, thank you for sharing your food preserving process! So nice to have on hand for the winter. We will try the new peach variety you mention.
    One thing that helped us work quicker was grabbing a handful of beans with the stem tips all on one side, then cutting them all at once with scissors. Just a small thing, but they got into the pot lots faster!

    Great video! You got a good pressure cooker. I hv used mine for 40 yrs with no issues. You can replace rubber gasket if it dries out. Also you can take your gauge to local co-op extension office to hv it calibrated every year or two depending on usage. Looks like you did a great job!

    Good for you to be brave and try the pressure canner! With pressure canning, don’t forget to let the canner vent for 10 minutes before you put the weight on so there won’t be any pockets of air instead of steam. Also, green beans in quarts are supposed to be canned for 25 minutes.

    I’ve never done canning. My Mama did it when I was growing up. I guess as a kid I wasn’t into learning but sure did enjoy eating it.
    Being I’m alone now its not worth the time to do it. I couldn’t use it up. It would probably take years for me to eat it all. It would be nice to get with a friend n do it together then I could take only a few jars.
    My Mam always used the pressure cooker for her canning n also for many dinners. I’m like you I’d be afraid it would blow up.

    Pressure canning is for food with no or little acidity. Hot water bath is only suitable and safe for highly acidic foods.

    Mary, I love watching your videos you have one of those voices that relaxes, and I don’t mean put to sleep! We live in south central Ohio and I am looking forward to falling leaves and a slower pace. I noticed that you did not “string” the beans. What variety were they? Keep doing what you, you are a blessing.

    ❤ Hi Mary, So delightful to see that you still can and freeze! Question for you…why did you only put about a half or so amount of water in your quart jars of green beans? I don’t personally like the pressure cooker for canning…but apparently fish needs to be canned in the pressure cooker… When I grew up at the farm, we had our own meat from steers and chickens…and we water bathed these meats, no water added to the quart jars, only 1 tsp. of pickling salt per quart… These always turned out SO good! But fish is different I guess!
    Awesome that your mom came over! My mom passed away in year 2000…and I miss her SO much! I love you Mary…God bless you SO much! ❤❤❤❤❤❤❤

    Where I’m from, we never called it canning, it was called bottling. “ I had bottled Moose for supper” lol
    When I started watching TH-cam videos I was wondering why I heard so much about canning, then when I’d check it out they were actually bottling 😂 , took me awhile to figure out that canning was the same as bottling!
    We’ve never used a pressured canning pot, always a water bath or oven sealed. I think I’d be too nervous with a canning pot!

    I can beef stew, chicken and rice and that type food. A pressure canner is a must for those. We have a propane burner outside so we can just put the pressure canner out there and let it do its thing.

    So fun to watch you in the kitchen :-D And what a clevere idea to use that large tupperware-container to freeze a cheese-cake in. I've had one for 20 years, and have never thought of doing that. Brilliant! I'll do that next time :-D

    Hi Mary, with the hot water bath, you can sometimes hear the cans seal with light “pop” sound. Just a tip.
