These are some good choices - I built the '64 Impala about 20 years ago and it is still in my collection now, and while you mention the '63 Ford Galaxie, the '66 one Round 2 just rereleased is a nice model as well with lots of building options but still pretty simple to put together.

As far as ranking kits from easiest to most difficult, I would put the '66 Galaxie more in the middle - not quite as easy as the 1964 Impala and "Promos with engines" kits, but not as advanced as AMT's 1962 Ford Thunderbird where you are putting on the windshield wipes and building a 35 piece engine.
You are correct. Strange that he's almost 1/25th scale, isn't it? I mean, how would McDonnalds know that back in the 1980's? I just wish I had some of the other figures of the gang.
