It's been a year. Have you checked the bolts to see if they are as tight as they were when installed? If not consider putting a lock washer under the nut or using a drop/dab or two of blue locktite to keep them tight. A nylock nut as suggested earlier will work too. Pounding on the vise or bench can have a tendency to loosen the bolts. A lot depends on the type of work you do on the bench/vise. Thanks for posting.
You went through all that yet STILL didn't provide proper clearance for vertical work ! See at the very end of the video how the clamped level is still hitting the edge of the bench top ? Measure twice...cut once fellas ! Don't fret however, a simple cure may help. Just extend the rear (stationary) jaw with a magnetic jaw pad or just add a 1" thick small strip of either metal or wood to the rear jaw to extend the work piece out enough to clear the bench. Something you shouldn't have needed to have done, but it is what it is.
I know it looks tight in the video but I do have enough clearance. I can also rotate the vice approximately 90° and it clears the other side of the workbench.thanks for the suggestion though! Might help someone else!
For bonus points... might I suggest replacing the lower fasteners with thick 'fender' washers & nylocks

Carriage bolts? They look like your typical hex head bolt. Carriage bolts have a rounded /smooth head and a square neck just to under the head.
