Lard is great for baking, BUT you must use leaf lard, not the cheap brick lard you find in the grocery store. Leaf lard is readily available on line. Other great fats for baking are duck and goose fat. And there's nothing better for frying french fries than beef tallow.

Milk and an acid can work as a buttermilk sub.
Plus homemade buttermilk I've done in a pinch. Fried buttermilk chicken is steak to me.
