@@Null94 Sodium hydroxide makes the starch weaker and more elastic. This makes the surface smooth, shiny and more easily browned The same can be done with baking soda. It is completely gone by the time the pretzels leave the oven.

This man's voice is so iconic.
I once worked in a restaurant that got similar frozen cookie pucks. We would smash 2 together to get large sized cookies. We also got buckets of muffin dough. We would just scoop out the dough with an icecream scoop. "Fresh baked" cookies and muffins... They came frozen, we would bake them, refreeze the products and finally thaw them as they sold.
For all that the cookies and muffins were delicious... Even if "fresh"
Uh, I used to haul potatoes from storage bins to frito-lays, and the potatoes stay in those storage bins for up to 6 months, not 24 hours of picking.

This was the best ad that cookie company could have ever bought. Most factory made cookies are pretty gross, but the ingredients and process in this video look perfect. The manufacturer is still in business (they're the supplier for Doubletree!) and you can still buy those tins they were packing. They cost $42 though! Oof.

I've actually made potato chips at home, both fried and baked. It's really not that hard. Baking is much healthier as the biggest problem with potato chips is the oil they absorb during the frying process.

its sad really, years ago in the 20th century, you would of gotten a lot more for less than you do today, for a good example, if you look at thew difference of milk in the 20th century to now, its more water, and another example, cakes used to have double if not quadruple the thickness of icing, it really is a shame we pay more for less.
