Peel them,cut into cubes, add a lot of chopped parseley, and a lot of fresh garlic chopped, salt and pepper and some olive oil, cover with water( not too much ) boil until Artichokes are soft, mash them with a fork and serve them with sourdough bread.... They taste Heavenly
