Hii girl hope you doing good but I just can’t stop failing to make candied grapes/ pineapples. I’m making candied grapes, and my candy thermometer was stuck at 280 degrees for a long time and its cap exploded? 😭 Anyways when it reached 300 I removed it and added in Anna Clark’s bright white food coloring gel, as soon as I added that the mixture began to get sticky and after I added Betty cookers red gel food coloring, I was only able to dip 3 grapes before the whole thing crystallized and I tried dipping my frozen pineapples before the grapes but they just wouldn’t stick to the mixture for some reason? I would dip it in and nothing would stick. I’m not sure what I’m doing wrong please help me girl idk if it’s my gel food colorings or what 🙏 I use the same flavorings as you use and the same candy thermometer.

I make sure it’s not humid in the house and I put the fruit straight into the fridge after dipping. What could I possibly be doing wrong? Dipping at the wrong temp maybe? I froze them overnight before using and kept in the freezer in an airtight container but it started to break down and the pineapple was soggy , what did i do wrong?
When you remove your pineapples from the freezer, they will not last no longer than a couple hours so when you serve this particular dessert, they should be ate within the time they are served because they will start breaking down within 24 hours. There’s no other way to dip pineapples sauce because they were tear off into the candy mixture so you have to freeze down in order to get The candy coating on them now what I prefer is that when you do the pineapples you can coat them with the candy topping and they will last longer but if you’re only dipping them in a solid color and you remove them from the freezer, they will begin to break down in melt because of the pineapples will start to come to room temperature And I’m sure everyone have that experience because water/juice breaks down sugar.

Any time❤️ the shelflife of these pineapples both ways are very short, and I explain in a few of my Kandi fruit videos that when you’re dipping candy, fruit know that it’s a fresh fruit that’s dip in a hot mixture, and they don’t last no longer than 24 to 48 hours by placing them in the freezer you’re keeping the candy coated for just a short period of time because when it comes to room temperature, it will start to break down so when given to the customer they need to enjoy it within the 24 hour. Now if it has a candy coating like the crush candy, or if it’s wrapped in the fruit roll up, it’s a better chance that they will last up to a week or two and that’s with them being fully covered and I like those better than just plain, and nothing coded on top so I prefer the coding because they last longer
They’re not meant to leave out for a long period time. You have to have your packaging, ready and package them to go in the freezer. If they stay out for a couple hours they will begin to break down.
No you don’t but if it’s hot and humid in the house you may want to put them in the freezer until you wrap the next one but I didn’t have to keep them in the freezer while I wrap mines

Can we have a conversation in regard to preserving once you freeze do you advise customers to leave out for so long then eat or eat them frozen? Do you ever store in fridge and I am learning best is to freeze and they last a week but if a customer puts in fridge how long do you advised before they are bad??
I recommend that once a customer receives this particular treat. If they’re not ready to enjoy them they should place them in the freezer placing them in the refrigerator will potentially cause them to break down. If a customer is ready to enjoy them and they do not like to eat them frozen then they should take them out 10 to 15 minutes to enjoy them
Yes absolutely you’ll just have to cut part of it off because if you use the full long strip, it’ll overlap and you wanted to be even. But because I did this video a while back, I got videos already done showing that way. I just got around to uploading them. I had a death in the family and I hadn’t had a chance to upload my videos so you’ll be seeing them coming, so stay tune.

You may be using the wrong brand food coloring that could be causing your mixture to seize quickly
I have a question after you dip them in the candy do you put them back in the fridge before wrapping them in candy or you do it all in one sitting ?
I do it in all one setting, but if it’s taking me a little longer, I’ll put them back in the freezer

Yes you can! But the color won’t be as vibrant when you don’t use the white coloring it’ll be more transparent
