    Ingredients:
    For the Stuffed Okra:
    Okra (Bhindi): 250 grams, washed and dried
    Besan (Chickpea Flour): 2 tablespoons - optional
    Cumin Seeds: 1 teaspoon
    Coriander Powder: 1 tablespoon
    Turmeric Powder: 1 teaspoon
    Red Chili Powder: 1 teaspoon (adjust to taste)
    Garam Masala: ½ teaspoon- optional
    Amchur (Dry Mango Powder): 1 teaspoon - optional
    Black pepper and Salt: To taste
    60g Grated coconut
    60g roasted peanut powder
    1 tbsp curry powder
    1 tbsp Turmeric powder
    30g chopped tomato
    Oil: 5-7 tablespoons (for cooking)
    Lemon Juice: 1 tablespoon -optional
    Coriander Leaves: 2 tablespoons, finely chopped
    For the Mint Chutney:
    Fresh Mint Leaves: 60g
    Fresh Coriander Leaves: 60g
    Green Chilies: 2 (adjust to taste)
    Ginger: 1-inch piece - optional
    Lemon Juice: 1 tablespoon - optional
    2 Garlic claws
    20g Tamarind juice
    Salt: To taste
    50g Grated coconut
    Yogurt (optional): 2 tablespoons (for a creamier chutney)
    30ml water
    Method:
    1. Preparing the Okra:
    Step 1: Trim the ends of the okra and make a slit lengthwise, being careful not to cut all the way through.
    Step 2: In a mixing bowl, combine the grated coconut, roasted peanut, cumin, curry, chili, turmeric powder, salt, and lemon juice. Mix well to form a dry spice mixture.
    Step 3: Gently stuff each okra with the spice mixture, making sure to fill it well without overstuffing.
    2. Cooking the Stuffed Okra:
    Step 4: Heat oil in a pan over medium heat. Add the stuffed okra and cook, turning occasionally, until the okra is tender and lightly browned on all sides (about 10-15 minutes). Make sure the heat is not too high to prevent the spices from burning.
