Nick DiGiovanni Egg Yolk Raviolo
Pasta Dough:
1 cup ap flour
1 cup semolina flour
3 eggs + 2 egg yolks
Filling:
2 cups ricotta cheese
1 cup parmesan
2 teaspoons salt
1 teaspoon nutmeg
Cayenne pepper to taste
Sauce:
1 stick butter
A few sage leaves
Toppings:
Toasted pine nuts

this was the king of Italy's favorite dish. the pasta nobile recipe included eggs a bit of evoo & a splash of white wine. it was traditionally served in a bit larger circumference in a good broth as well.
ya'll did a FINE job! my son cohutta (mtv the real world Sydney) is 37yrs old now & a great cook! moved from Georgia to Montana and just beautiful foods out there! my daughter hope is 32 & she & her husband are amazing cooks as well. I think it's SO cool all the young people across the world are getting into cooking & going full blown old school!
my 1st encounter with this dish was on PBS when cohutta was a baby & lorenza demedici prepared it on her show. she put out the most beautiful series of HUGE "coffee table" books on italy by region. I have TUSCANY. she's fabulous and I was blessed to see lidia bastianich & marcella hazan too, as well as jacques pepin & julia child. they'll never steer you wrong 🥰🥰🙏🏻🙏🏻❤❤
This is every school project where the teacher forces you to work with someone you’ve never worked with before. Ahmad is the cool, popular kid and Nick is the geeky perfectionist. The teacher has no faith in them working together. They manage to pull it out the bag and make the best dish in the class.

Growing up in Chinatown in San Francisco in the 1980's, the Italian-American neighborhood of North Beach is just north of Chinatown and I've learned from friends there that ravioli is plural of raviolo in Italian. I nailed that one right on. :)
