Bht sare states k achar khaye ..I found one thing in common that achar is not fried or cooked once prepared and tarka being a different thing But only in Kashmir I saw this achar which is more or less like a spicy Salad or in simple term bhaji😂

Due to carom seeds ye sour hota hai...no need of lemon or vinegar.
Mam isko koi lemon ,sirka ya tamar nhi dalni khata kis se hoga ye n oil jo hai wo garam kar k dalna hai ya kaccha
