    Hi Amy & Eric!!! I have never heard of this Chef until you started to do some of his recipes. Good thing you brought Julia♡ into it today.Also I liked Amys sauce too!!!...This omelet does look mighty good to me. Years ago it sure took long to make the sauce.     O you like to keep the stems on the spinach? I usually pull the thicker stems off, does it matter??

      You can pull off the stems. This spinach came from one of those salad bag type packages. I didn't bother taking off the stems...but it is a good idea to do so. Thanks for watching, JMac!
