  • Adam Handling creates three dishes using products from Wild Harvest the first is Nitro salmon, a salmon dish that is dusted with fennel pollen and then slow cooked it's served with peas and frosted petals. His second is a rump of lamb with artichokes, home made sour cream, and onions, the last dish is a stunning chocolate dish with different types of chocolate, served with caramel and black currants.

    In the second dish, those were Sunchokes, or Jerusalem Artichokes. Simply calling them Artichokes is a bit misleading. But I'm nit-picking here, as all of these dishes look incredible.
