Philadelphia Fish-House Punch - Better Cocktails at Home

  • There's a little place just out of town,
    Where, if you go to lunch,
    They'll make you forget your mother-in-law
    With a drink called Fish-House Punch. (1885)
    That drink is Philadelphia Fish-House Punch from the State in Schuylkill, a social club where the members fished, hunted, ate and drank. If you are into cocktails, you should make this at least once due to the historical connection and the fine example it is to punch making.
    2oz lemon juice
    6oz water
    1oz sugar
    1.5oz rum
    .75oz cognac
    .75oz peach brandy (or .75oz of 4:1 apple brandy to peach liqueur)

    This is 100% intriguing; especially the combination of spirits. Recently started utilizing water or club soda in new recipes and can appreciate the extension it provides while not compromising the overall flavor profile. Nice work!

      It is, but it is so essential. It's hard to imagine not having ice so easily available.

    If you happen to live in Utah you can pick up peach brandy from The Hive.

      What's The Hive? A quick search turns up a handful of businesses, but none appear to be distilleries.

      @@ZachZoschke The Hive Winery and Distillery in Layton Utah. I hope they didn't go out of business when I wasn't looking. Last time I was there they had a bunch of stuff.

    Kuchan's been extinct for years, how long have you had that bottle? I have a bottle of the barrel aged I've had for at least 8, and I'll be sad when the little bit sloshing around inside is gone.

      A long time. I've been saving it to make this video. I think I have about 2oz left. At least I know that the apple brandy-peach liqueur combo is an OK substitute.

      Just seeing the bottle kind of hurts honestly. Every so often I check if it's back in production. Nope, and nothing on the market to take its place. I made a big bowl of this which used up about half the bottle. Good times, but I also kind of regret it now that it's nearly gone.       I hear ya. Now that I've filmed this, I'll probably just finish the bottle off by drinking it neat. Lots of subtle flavor to the peach brandy compared to peach liqueur. Nice vids. I'll be watching them as you're funnier than I am.

      The Hive Winery makes peach brandy in Utah. It's pretty good. I don't know if it's available in other states. If you happen to be passing by SLC, check it out.
