I do not recommend to put water ( may just a little) to to cook the 1st vegetarian dish. Should use a bit more oil. This way, the vegetarian will have a better presentation and most important taste better.
Certainly looks yummy. Perhaps Singaporeans can start reflecting on the extremely good life with great food available easily. Too much of too rich food is detrimental to the body and the brain. Too little attention is given to healthier consumption.

醋
可以用罐的tomato puree,在speed 99也可以找到，那个一定要放。只是亚三片蕃茄是不够的。

用啊叁皮煮的酸辣芥菜是最到味。买不到的话就只好用啊叁膏或醋替代啊叁皮，但酸度会是与啊叁皮酸有出入。

This can be easily found in wet markets or supermarkets in Malaysia, not too sure in Singapore though
