I haven't tried a double batch, but I would think you would double everything. I would also shorten the NR time because it's going to take longer to come to pressure.
That has happened to me when making whole chicken breast not in liquid, but this doesn't turn out dry because it is in the liquid and not PC'd that long.
We made the gumbo recipe and used thighs and breasts because it felt like we didn't have enough thighs after we left the store, and it turned out so tender!! I had never used a pressure cooker before and I was truly shocked to see how juicy and tender it turned out. If you haven't done the gumbo I recommend and would give 10 out of 5 stars. It's amazing
