Oh wait , I thought that this was my iPhone video. For the Meta Quest 3, it depends on how many games you plan to play and switch between. I only use my meta quest 3 for exercise and movies so 128gbs is enough. but if you play a load of games then you'll want the 512gb.

Depends on if you want better graphics, tracking, AR (Augmented Reality), and color passthrough. If that's the case then get the 3.
If you don't care about those upgrades... then a quest two will suffice.
