    I had many anglo-indian friends from school. They were a lovely community, believed in live and let live, and eat, drink, and be merry. Had great fun at their christmas and new year parties, they invited everyone, the more the merrier. A community sadly lost to immigration and diminishing birth rate, just a few remain in their homeland, reminiscing about the good old times. I think it was their christian values that led to their bindass airs and inclusive attitude and their joie de vivre. Miss those lovely girls and guys, an anglo -indian guy i knew helped me polish my jive and other dance steps like cha cha cha. Sweet memories. Where have all the flowers gone. This lovely lady reminded me of their mommies and aunties tirelessly cooking pots of food, piling the table and urging us all to take a break from dancing and eat before food got cold. The uncles drinking whisky and dancing along with us were darlings too. They may not have been rich in money but were certainly rich in happiness and family love, they had large extended families all over the world and dreamed of going abroad. Hope they are all flourishing wherever they are.❤

    Thank you Bridget..you're doing a great job of keeping the Anglo indian recipes alive and going.
    You're right about each family's recipes, for thickening my mother used to brown the onions then add 2 tbsp of flour broil it till a light golden colour add a 1/4 tsp of pepper powder stir and then add it to the stew and boil till it thickens, she would also add at this time a tsp of white vinegar to flavor. Sometimes at the end she would add a tsp of marmite too.

      Thank you Jennifer. Yes for Brown Stew I also thicken in the same way. It gives the stew a smoky flavour. How lovely that your mum added marmite too at the end. Each one gave it their own special touch and that’s what has endured this cuisine for ages. God bless

    My aunt was Anglo Indian and she thought me this stew. She's no more, but I love cooking this dish. It's healthy & as my is not keeping well since few days, this stew is actually the best comfort food for gloomy days. Thank you ❤

    Looking good, mouth watering. I will try it. Anglo Indians were a lovely community in India. Well dressed, young women wearing mini skirts and men with ties going dancing to good western orchestra tunes. They were jolly people, loved to eat good food. They contributed a lot in Air Force as pilots. Gone now where?

    I made it with beef and it came out superb. This is what I made again today for our family friends who wanted to eat authentic anglo Indian food. I also made devil chutney , pepper water and chicken Vindaloo . Everything came superb. I live in the United States and keeping the culture and cuisines of our ancestors was hard to practice due to the life style we have here , but your recipes are very simple and I really admire all the efforts you put to show your passion . You make the videos by yourself and it’s no joke . Keep up the good work aunty and have a wonderful and prosperous new year.

    Hi Bridget. Very good. Thank you so much. I made your Anglo Indian Chicken Curry on Sunday. It was just like my late mother's cooking! I was delighted to taste those flavours again! She passed over in 1995. She was from Burma, but lived in Pakistan for 10 years after Partition. It is great that I can now learn how to cook some of the Anglo Indian food I grew up on in the UK!       You could have it with rice, bread, dinner rolls, chapattis etc. I used Knol khol. You could use turnips instead

    Would like it to be without cornflour.
    1 tsf of oats also can be used

      You could omit cornflour and use plain flour. Oats may not thicken as smoothly as flour.

    A poor man's version of this used to be served during lunch and dinner at the catholic boarding school i went to in bangalore..... with bread to mop up the gravy .... unfortunately do not have good memories of this😢
    Hindu kids at a catholic boarding school and they would serve us beef!!!! .... sometimes duck in the stew instead of chicken ..... expensive boarding school where they served us sub par food!

    This was a staple in our armed forces home. Our cook never managed to say "stew" and the best he could do was "toos".

    Stew, in Malayalam it's ishtoo.
    goes with bread and appam.
    we add coconut milk, raisins and cashews.
    primarily a breakfast dish.

    We Kerala Christians do the same stew, with coconut milk as gravy. No flour/tomato is added, we often add fried raisins or cashews too.

      Ok. This is Anglo-Indian version. Flour is roasted and added that is why it is known as Brown Stew

      It’s plain flour mixed with water. However, you could use cornflour if you like

      It is maida. Refined flour. Wheat flour will make it slimy. The flour is used as a thickening agent

    A lovely recipe but the audio isnt clear. Instructions cant be heard because of the cooking noises, camera and mic placement is important

      ANGLO-INDIAN BROWN STEW - MEAT AND VEGETABLE STEW
      Ingredients
      1/2 kg meat either beef, lamb or mutton cut into medium pieces
      3 carrots, 4 French beans, 3 potatoes, 3 knolkhol all cut into fairly big pieces
      3 green chilies slit lengthwise
      2 medium size tomatoes chopped
      1 big onion sliced
      2 teaspoons ginger garlic paste
      3 or 4 cloves, 2 pieces of cinnamon
      6 or 7 pepper corns or 1 teaspoon ground pepper
      A few mint leaves
      Salt to taste
      2 tablespoons oil
      2 tablespoons flour
      Heat oil in a pressure cooker or a pot and add the onions, cinnamon, cloves, pepper corns and green chillies and fry till light brown.
      Add the tomatoes, ginger garlic paste, salt, mint, pepper and the meat and fry for a few minutes.
      Add sufficient water and cook till the meat is tender.
      (You could either pressure cook it or cook on Low heat on the gas hob)
      Once the meat is soft, add the vegetables and cook till they are tender
      Make a thin paste of the flour and about ¼ cup of water and mix into the cooked meat and vegetables and simmer for 5 minutes.
      Serve hot with bread or hoppers.
      Note: For Dumpling Stew, make dumplings as follows and add along with the meat and vegetables while cooking.
      To make the dumplings, you will need 1 cup of flour, 1 teaspoon butter and a pinch of salt. Mix all together with a little water to form soft dough. Form into small balls and flatten slightly. Add to the stew while cooking.
