Doing mine today :) Couldn't find beef talo, so I'll use bacon fat.
Bacon fat will be perfect.

Once the bark has fully formed I’d wrap then. It’s probably 2 hours into the cook.

Aside from not having the space the price isn't bad imho.What's the power of your BBQ ? I'm looking to buy one in the future , do you use natural gas or the tanks ?
This one is a combo of electric and wood biscuits.
