There is no such thing as a "cover" in flamenco. They are playing a bulerias, a song form, all of which share certain elements (the timing, structure of the verses, etc) that the singer conforms to, but improvises many other elements, including the verses he chooses to sing.

the whole tapping on the table must be a cultural thing but really adds when it's just an un-amplified acoustic instrument. Kind of makes me think of these old vids of Irish pubs where little tables had a guitar and fiddle and people around them. It's like a little gathering. I went into a supposed Irish pub lately and the music was all amplified so you could not even hear anyone talking. I often feel it would be nice to go into some place where nothing was amplified ..... so the sound may be very limited to small circles but in a way, much more authentic!!!
