To me Mafell tools are the best powertools money can buy as a carpenter. Anyone with long-term experience on them will agree.

Watching your video 9 Years later nice work guys used to do this stuff mostly by hand (not all)... Well done neat and tidy more electric tools than you can shake a stick at ( I like them though makes working so much easier for sure).

Why is it that nobody cuts the dowels flush when I see people use them like this?

Well, I'm no expert, but my understanding is: it's because the pegs used to be slightly tapered. So, you drill your peg holes in the post, dry fit the brace and mark where the post holes correspond and then drill the holes in the brace for the pegs about 1/16th, or 1/8th inch 'off' so that the tapered pegs pull the joint tight when you drive them. Then, if you leave them proud, you have more peg to drive when the wood shrinks and so you can draw the joint tight again. These days people seem to use straight dowel rather than tapered pegs, so I guess it's probably to look authentic?

Where is it required that the pegs be cutoff flush? Depending on the design, needs and wants of the customer there is no rule that says they have to be cut off. Even Frank Lloyd Wright in his designs had the pegs protruding and shaped into a decorative element.

Oh well, I'll have to use a drill and chisel. I can't afford a $3,500 chain mortiser like that. I wish I could.
