Great video! My canning tomatoes are struggling with end rot this year due to the hot weather in zone 10. It's refreshing to see that your garden is doing incredible, and I appreciate you taking the time to record this video for us. By any chance, have you tried canning soups? I recently purchased a canning setup. Thank you for the great tip on canning outdoors using that propane burner. We turned our entire house into a sauna over the weekend 😭. I wish you lived closer so we can make pizza and brisket over the weekend.
After we did our pasta sauce canning video, I discovered that you could roast the tomatoes instead of boiling/peeling, it’s supposedly much easier and faster. So I will definitely give that a try. Great video, and as a cap man, good to see you in a cap. lol
After a few years of blanching and peeling I bought an inexpensive tomato press. Let me tell ya, they are a lifechanger! They separate all the seeds and skins from the tomato. I highly recommend getting one. Your sauce looks great btw!
I core my fresh tomatoes, remove any blemishes, and throw them into the blender. The skins get blended enough to disappear. There are a few seeds that make it through, but not many. Saves me a ton of time and mess. Then I cook them down and jar like normal.

I’ll have to try this! It takes forever with the skins!
