Don’t like that you used beef stew meat, enchiladas is supposed to be made with ground beef or chicken, this looks more like “Carne Guisada” befor you added all the tortilla.

If you used ground beef and sautéed the onion with the beef how long would you have to cook it in the crockpot? I’m thinking just a couple hours.

It's an enchilada casserole. Enchilada casseroles do not have rolled enchiladas. :)
