One of the cool things about the Latin American cuisine types is that customers love to pair their meals with drinks they may not typically get at an American food spot. Drinks are often times really cost effective and don't require a lot of time by your staff to prepare. I see that you already offer maracuya and chicha rosada. Try adding more drink options that could appeal to people who may prefer other flavors. You could also try low cost appetizers/side like a peruvian take on loaded fries, plain fries, chips and salsa, and nachos.

Repeat that process for the other ingredients in the dish along with other costs to find your cost per dish. There are several recipe cost calculators online that can help you do this.

I looked at your menu and I’d recommend food items like flautas or chilaquiles. Both items are easy to make and do not require other ingredients than what you already have on your menu. Mexican cuisine is typically pretty friends to creating a diverse menu while also keeping costs low to do so. I looked at your menu and I’d recommend food items like flautas or chilaquiles. Both items are easy to make and do not require other ingredients than what you already have on your menu.
Upselling through chips and salsa, chips and queso, and chips and guac can also go a long way.
