I miss my moms cooking and now I’m out of moms house. I been looking up home made Laos food but when I do visit mom house my to go plate is a few bags lol

I don't measure my ingredients, so everything is according to taste and preference.
There are no specific rules . I like to add lot of thai basil and thai egg plant.into it
If you don’t have banana leaves, can you just use aluminum foil?

Yes, yes can use two layers of lotus leaves too
Can we skip the fermented fish ?
Yes, you can omit the fermented fish sauce and just do salt and fish sauce.
Is it OK if there is no dill. Cuz I can't find it here sadly 😭
Yes, it'll still taste awesome without it.
