    With the exception of vanilla beans and coffee beans, I do not add alcohol, extracts, or flavorings to any ingredient I am going to cook because the heat degrades the flavor. Instead, I add them to the mixture after the cooked mixture has cooled.

    Thanks for an informative video.
    I watched expecting to hear some discussion about how alcohol changes the freezing point of ice cream. Instead, I learned how alcohol added to commercial ice cream may need the approval of governmental authorities.

    I may use any of the following in my ice cream:
    Jack Daniels Tennessee Whiskey
    Jamaican rum
    amaretto
    peach schnapps
    brandy
    cognac
    sherry
    I sometimes use Balsamic vinegar as a flavoring instead of alcohol.

    Alcohol will evaporate fast because it has a lower boiling point so all you be left with is nothing but water

      Yes but there are other solids in the alcohol mixture that will be left to make the concentrate.

      rum raisin is a great ice cream flavor. But if you're envisioning alcohol just being added across the board, that would indeed be an abomination, lol.
