    One more important question! Won't the Royal icing wilt or melt, so to say, when applied to a buttercream cake, due to the fat content in the buttercream ?

      We only use royal icing to decorate cakes when the outside is covered in fondant. If the cake has no fondant covering, and is instead a buttercream cake, we will use more buttercream for piped decorations like borders, swags, and messages

    Can you use eggwhites rather than meringue powder, and if so, how many?

      Yes you can use egg whites. The recipe calls for 3/4 cup of water, or 6 ounces, so you can replace that volume of water with egg whites. Usually 1 large egg white is around 1 ounce, so 6 egg whites should work in this recipe. You can always adjust the consistency with water or powdered sugar to loosen or stiffen the royal icing

    Hi, I want to know when royal icing gets harden then how to cut the cake and it's decoration or icing on a cake. Thank you.

      So royal icing is never meant to cover the whole cake. It is used as a cake glue to adhere bigger decorations or for intricate piping scrollwork detail as since it dries hard it won't smudge. You would cut the cake as normal with a knife. Since the royal icing dries hard it may crumble a bit as you're cutting but that's ok.
