Hi, I come from the region in Sweden where we produce "Surströmming". In my wildest dreams I would never thought that this could be a new market for the producers of surströmming. One day I hope that you will taste it as it should be, served with "tunnbröd" (thinbred), "mandelpotatis" (almond-potatoes) and a snaps of absolut! Its really delicious! Surströmming really dates back when the farmers of the coast in the northern part of Sweden starved during the winter (especially when the harvest failed due to the frost). Surströmming then was a life-saver! You should only eat the red fish-meat.
There's something very American about a Mom wearing a religious cross chain offering her children a hundred bucks if they'll eat Surstromming without vomiting. Love it!
From a proper Swede: First you open the can OUTSIDE in a bucket under water (wear rubber gloves). Pour the juice out of the can into the water. Then leave the can some distance away for where you'll be eating. Take a fish, put it on a plate and bring to the table. Cut off the tail. Take out the insides and separate the colon from the rest, the colon is trash. Stick your fork just under the skin where the head used to be and use a knife to gently peal off the skin on both sides (the skin makes you burp). Then stick your fork into the spine and use the knife to scrape the meat off the bones. Mix the meat with the insides and cut through a few times. Mix the surströmming with boiled fresh potatoes, a little garlic and some other onion of your choice (I like the red one). Put the mixture onto a flat, soft and white bread (or the hard variety, does not fold though). Put some sour creme on the mixture and fold the soft bread, or roll it up into a tube. Eat and enjoy a very tasty swedish delicacy 😘🤌 Btw, always store the can in the fridge, never in a pantry! And even though it has a "best before"-date you can keep a can of the right brand (preferably Oskar's surströmming) for 10 years if you like! I've heard their 2015 batch is extremely tasty since the fish from that year were fat and juicy with alot of eggs (rum?) 😍

Yes, it is smelly and salty, but for some reason surströmming has survived more than 500 years of recorded history in Sweden. Fermentation has been used by mankind for thousands of years to conserve food, probably in shortage of salt. Surströmming is produced in Norrland (northern part of Sweden) and mostly eaten during late summer or early fall. The traditional premier date is on the third Thursday of August. Here are some basic guidelines when it comes to eating surstromming. (1) Surströmming should always be eaten together with good friends who also like it. (2) Leave your children and pets at some other place before the meal - kids will hate the smell, dogs will love it. (3) Always open the tin can and serve surströmming OUTDOORS (for obvious reasons). The can is best opened under water in a bucket. (4) Never EVER eat surstromming straight from the tin can - and peel OFF the skin! (5) Always be sure to serve the right side dishes with surströmming (see video below). Consider sustromming a "spice" to the sides - no one in Sweden ever eat JUST surstromming. I once saw a video of some American food-bloggers which ate raw pork in Germany. In Germany it's very common to eat a "Mettbrötchen" which is basically a bun with minced pork meat and onions on it. Should be put on a tunnbröd (a kind of bread) with butter, some boiled potatoes, cream fresh, onions (red onions in my opinion). And some black pepper and chive. I'll go with "exposure". I'm originally from a town in the south of Sweden where every summer the algae washes up to dry and the entire town smells. I also do my own plumbing whenever needed. This is not tradition in my parts of the country but tried it a couple of years ago and had zero issues. Same with my grandmother so I'm thinking acclimatization helps. Convinced all the people in these videos are either huge pussies or hamming it up for the cameras. It's also a shame that everyone refuses to eat it the right way. Wether out of ignorance or for added humor idk.
I love surströmming.We actually save cans to the next summer because it is tastier. But next time you have to eat it correctly with bread,onions,potatoes and sourcream. And don´t forget the vodka!!!
