Made this for iftar today! Didn't have the tagine pot so I put everything in the oven and foil on top to keep the moisture and it turned out amazingly!

I was just recently gifted a tagine that I'd had my eyes on for a while, and started looking at different videos for ways to use it (that I'd actually put into practice). While I haven't tried it yet, this looks like the kind of recipe I not only could, but actually would follow. More than that, watching it I can see how I'd adjust it to keep the meals from becoming too much the same over time. Thank you for posting the video.
@@HalalChef And of course on my first attempt at making a tagine (onions, chicken thighs, potatoes, carrots, dates, tomatoes, golden raisins, and assorted spices) the base cracked, drained out all the fluid, and everythign burned to charcoal. They're sending a replacement (at some point) but this is very disappointing.
MashaAllah that looks good, will be trying it out today but I'm substituting dried plums which tend to be sweeter with tangy plums and I have some cherry chilli which I'm going to try. Insha'Allah will let you know how it turned out.

No, it will break. You will need a metal ring around it and you need to season it first. When you buy a new one, soak the full tagine parts in water overnight. Then do the following, Brush the entire tagine pot with olive oil, lid included Place your tagine pot in a cold oven and turn the heat up to 150°C (300°F). Leave for a couple of hours Turn the heat off and leave your tagine cool completely inside the oven. Don't take it out Take your tagine out of the oven and brush the interior (base and lid) with olive oil Let the oil soak at least an hour You're done! You can start using your tagine pot

I'm from Philippines so I never tried tagine so I got curious what spices should be in there to achieve that authentic Moroccan Tagine... When I search for it your recipe comes first... I'm really interested to try it Cause your recipe is very close on how I make my Chicken curry...a little bit difference on some spices here and there but very close 😀

You're welcome. Does your tagine have the metal ring around it? If not then get one so it won't break.

That's disappointing! Sometimes they don't check the quality of tagines. It happened with me one time in Morocco so I got the ring installed.
I like this recipe as everything is done on the tagine. Will try this with lamb.

Hi Bhanu, you needed a metal ring around the tajine so it won't crack. You can also use a shallow baking dish or a casserole dish

What kind of green olives do you use? WholeFoods had so many different kinds to choose from!
I used beldi green and brown olives. But, you can use picholine or any other type which is Green/Brown. They will go perfectly with the tagine (:
