I made this tonight and used a 28 ounce can of diced tomatoes (no 19 ounce around and I have no use for 9 ounces...lol) and used brown rice instead of white. Had to cook a little longer than you call for in the recipe but came out very flavorful. Gonna freeze some extra...can't see why not.
Just made this tonight before our winter storm comes. It was delicious!! I did add a little cumin to it and my boys scooped it up with tortilla chips. We all loved it! A new recipe to rotate through, thank you!!
I made that dish for dinner tonight and we really thought it was amazing. Finished it with avos, cream freche and cheddar cheese - such an amazing combination 🤩 thank you so much
awesome recipe, I think i will put the recipe with some cheese in a burrito and wrap it and lightly sear it in some oil for a crispy shell served with salsa and sour cream to dip in!
If you have some leftover rotisserie chicken, it's even quicker to make. Just sauté the onions and bell peppers and add the shredded chicken along with the broth to absorb flavor.
I would love to see meal prep stuff that actually works. Maybe how to meal prep the ingredients and ways to use them without having to repeat the same meal for the entire week.
This recipe is amazing! I have a hard time finding meals that all three of my girls will eat but they all love this one. Also, it is easy to follow so my 12 year old can make it with very little supervision. Thank you so much!

Looks really yummy! I do have a question - since we're putting chicken breasts right at the start, fry them, and then they are there cooking with broth etc won't the chicken be dry at the end? Would it be better to just add the chicken at the very end, so it's not raw, but just cooked?
I think that when you add the broth and tomatoes, because it continues cooking in liquid, the chicken will still be moist. But also, I think you can use some left over rotisserie chicken here, and then I'd only add after I add to broth, so it can absorb some fajita flavor.

I am English and this type of meal is not intuative to me so I will Google what a Fajita is. However you also said 'just as it is' and it looks wonderful. So that is how it will be eaten after I get some Bell Peppers. I think I have some Black Beans, check for those as well.

I have been making a version of this for years, ground turkey is great in this! I add a can of corn, I try to go for brown rice, add my own taco seasoning blend, and extra chipotle powder. YUM!! I know what's for dinner tonight.
Honestly, I discovered your channel a while ago when I was looking for gnocchi recipes (I've bought a bit too many packs during Italian weekend at local market;)), and since I've made about a dozen of your recipes. While I love too cook fancy stuff, like you said , there's no time for that during the week. That's where one pot recipes come, and yours are absolutely top tier and delicious. Quic, clean and super tasty with regular easy acces ingredients. Love that you are not going crazy with macros either way (everything is either no fat or all fat nowadays), , just regular delicious and filling food (although Yours 4 servings is usually my 2 :)) The last recipe I've made was Swiss and Ham baked gnocchi. Made it with Gruyere, topped with some additional Mozz, and added a bit of baby spinach. It was the most delicious. Thank you so much.

I think if you cooked it a little longer, say 20 minutes instead of the 15-17 minutes, it would be dryer.
Also how is the chicken breast not over cooked or dry?
