    After following along for all of this, I noticed she stopped growing when you started using tap water. Some tap water has to much chlorine in it for healthy sourdough starter. I know there are people that say they use tap water but really think back to how good she was before when you used filtered water. I use filtered out of my fridge and warm it a little on the microwave, not long maybe 15 seconds or so. Just stick a finger in it to test the temp. Should feel lukewarm.

    I used tap water on mine and ugh. I started leaving a pitcher out to off gas or used bottled water and finally got mine to grow. It didn't matter what brand of flour I used until I switched my water.

    A couple of thoughts on Jane (& you)and her journey. Tap water may have chlorine in it, I use bottled water. I started (many years ago) my sourdough using whole wheat flour I found it was less processed and more than likely had more natural yeast in it that provided what was needed in the starter. I now use mainly AP flour and occasionally use a boost of whole wheat. Warmth is definitely needed for activation, into the oven with the interior light on is sufficient in the winter months.

    Let her rest a bit longer. Like a full 72 hours. She shouldn’t mold and she should have some activity. I agree with the other comment that it could be your tap water killing the bacteria. If you need to use tap water try to let it sit out in an open container for a few hours so the chlorine can evaporate more from the water. ❤ merry Christmas to your family ❤ I’m so grateful for you ❤❤❤❤

    I've never made sourdough, that being said IMHO you might be stirring her too much &/or too vigorously. This is based on an experience I've recently had while making pancakes. The batter actually got thiner when stirring too much & too fast.

    If you turn the light above stove under micro on it gets area warm than put her in micro

    I have to ask myself why am I watching you day after day talking to your dead sourdough starter? And the answer is - I have no fucking idea why! But I keep watching. Maybe it's time to restart with Jane Dough 2.0 and use non-tap water just in case that helps.
