Steak BATTLE: I Challenged an Argentinian Grill Master

- In an America vs Argentina global beef showdown, I took on a BBQ master... My competitor cooked up what is easily the most unique cut of beef I have ever seen and needless to say, the steaks were high. For international bragging rights, this one was intense!
Shout out to @alfrugoniofc for coming out to Miami! Be sure to check him out!
Thank you @tagwoodbbq2008 for the insane Tagwood BBQ Argentine Santa Maria Wood Fire & Charcoal Gaucho Grill. It’s completely changed my outdoor cooking game!

Pro Tip: You don't give wine to an Argentinian while at a BBQ v Asado competition. It's like giving Popeye spinach before a boxing fight.
I did think he was in trouble when Al asked for more wine.

Great times amigo!! Thanks for having me, next time in Texas!!! Y vamos Argentina!!
Wow, that steak looked good

As a Chilean, and a neighbor, we all know that when it comes to bbq, grill, asado or whatever, Argentina is THE place. Now I live in México and both the grill (parrilla) and the meat are very different. I have to struggle a lot whet it comes to eat asado.
As they say: Argentina, you wouldn’t understand it.

As an argentinian, I truly appreciate all the respect in the comments. We are a tough opponent to beat when it comes to meat and barbecues, but im sure you guys in USA are pretty damn good as well! I would love to see more content like this! Keep it up and have a wonderful day!
as a Brazilian: I gotta say that the Argentinian asado (when done right) is unbeatable.
I also love all other styles (Brazilian, Uruguayan, American ...) but Argentinian is the king on the styles
Obrigado irmão
agree!
Great! And also, it's so simple! The seasoning is mostly Salt. And you just have to keep an eye to the heat.
No, Uruguayan asado is better, they use wood instead of coal and the beef quality for the local market is better in Uruguay.
I know that Brazil considers Paraguay as another state of Brazil (joking), but we have a word or two when it comes to great meat and asado. People just don't know.
This is awesome. Visited Argentina about a decade ago. The beef there is awesome and depending where you go the grilling methods are different just like anywhere, but what an amazing adventure. The thing that I mostly remember was the food quality, specially the steaks.
Yes, we usually do natural grass feed on our cattle, thats why the meat is so good
@@devgabriel6898 excelente la calidad. Deseoso por visitar nuevamente!
Every region has their own style and each will tell you thye are the better one, honestly even the ones that use only salt and nothing else are delicious.

As a Texan who loves bbq that has lived in Argentina, it’s Argentina all the way, hands down, no contest. Literally everything is better from the beef, the cuts of meat, the cooking method. Travel to Argentina if you can!
Just came from the butchers. 4U$/kg, that would come to 2U$/lb... How does that sound to you? (a very nice steak). A good steak at a very nice place well under 10U$, for that probably as much beef as you can eat...
Not so great for us right now here, but prices are ridiculous if you compare with absolutely everywhere else...
as a mexican i simply can’t easily go to argentina because of my skin color and my accent

Great friend is Argentinian, and his dad would do a grilled feast once a year, and that setup brings back great memories. Best meals ever.
*”asado is not a meal man, it’s like whole experience”* 👁️👄👁️
It is
Yeah it's about enjoy the day, to take your time ,share some wines, fernet or mate with your family or friends starting at the morning and finishing at night
Yes it is an experience. Talking with your friend and laughing eith them with a glass in your hand while you are preparing an asado is one of those moments when you dont need anything else
Al: Takes all day to make the perfect steak
Max : "Reverse sear. Set it and forget it."
edit : before anyone thinks im offending someone, thats not my intent. its probably miles better because of how much care is put in.
Because asado takes like 6hs of prep before, you first start the grill at 9 am to have a meal at 13pm it is a whole experience since you start the choripan and morcilla first as app etc
Vacío is a cut that if You cook fast, will get harder than a rock
@@MauroB26 If you have a moron making the fire, sure. You can have a top tier asado in 3 hours. 6 Hours is just too much incompetence or people are socializing instead of actually preping
@@MauroB26yeah, i usually start at 10:00 to eat at 13:30, but I almost always cook "banderita" which is a very fast cut.
Also, we the Argentineans always take it as an event with friends or family, so you know in advance that you will spend the whole day doing that, In fact it is rare that people do not gather near the grill, drinking wine or fernet, to simplify it, it's more of a social event.
The "asado" is a more collaborative event than the BBQ, where you can see the pit master usually left alone, usually people gathers around the grill... and its not "gaucho" at all leaving the pitmaster alone, everyone will eat, everyone must help.
The amount of fun you guys had filming this should be illegal :) Love it !
Lol, Max being a bit tipsy right at the end there.😂
@@Shivas-cj7vr 🤣
That vacio's cooking point it's just perfect. Al is representing us very well.
Al wasn't lying when said that it's a whole experience, it's more like a social event you spend with your familiy and/or friends, everyone's helping, supporting the pit master whit hydratation, maybe keeping the fire on, prob preparing the salads, everyone's hanging around the grill chatting and laughing, drinking some wine, 'fernet', 'cinzano' or beer.
For example, with my friends we start our 'asado' at 9pm drinking some beers (preparing the grill at 8.30pm) to start eating at 11.30pm with wine. After the dinner we end up drinking 'fernet', playing card games as 'truco' or 'chinchón' or playing the guitar, some 'chacareras' or 'sambas'. It's a beatiful tradition.
I really enjoyed the video, keep it up Max!!!! Greetings from San Luis, Argentina
Hi Max, argentinian here. The other day I was talking with a conversation exchange partner (he's learning spanish while I'm practicing english) and he asked me about the differences between argentinian style meat cooking and american style. While trying to explain it to him I realized I lacked the vocabulary to give a proper explanation, thus this video is exactly what I needed.
Thanks to you and Al so much for sharing it!
Also the colour of the vacio looks wonderful! This is exactly what most of us argies like when it comes to the point of the meat
My family is from Argentina and I just spent 3 weeks with my brother traveling around, seeing family, the country, and eating the most amazing food! Vamos vamos, Argentina 🇦🇷!

There's just something joyous and heartwarming about watching someone bring something special, incredible, and unique from their home country, they know what they're doing and have full confidence in it 100%. They say screw the "normal" rules, screw "traditional/classic" cooking conventions, here's something that has heart and soul in it and tastes amazing and they just have so much fun cooking it. Definitely subbed to Al after this!
I mean, its obviously not conventional french cooking, but what Al did is extremely traditional, its the way meat has been cooked in Argentina for a very long time, if he wanted to go more traditional he would have used an "Asador" which is usually used for cooking larger meats (a whole leg of beef, a pig, a lamb), its a stake that you place next to an open fire, and anyone that knows how to cook with that method is extremely well versed in making Asados. The method Al used, which is the Parrilla (Argentinian Grill) is just the most commonly used in Argentina because it imparts the flavor we like while also keeping the open fire, over embers, traditional style, in a more convinient way.
The thing about this comment is you asume the "classic" or "conventional" way is the American way, but that's false. Bbqs have been done like that in argentina for centuries, cooking like that is indeed classical and conventional, just not in your country. The more you know.
Definitely agree, that's why I put "classic" in quotes. In hindsight I should've also put "traditional" and "normal" in quotes, which I have now added for clarification. Often a lot of cooking channels fall into the "european/french-inspired" cooking is the "right" way and everything else is considered unconventional, but there's so much unique food all over the world made a bunch of different ways and it's always amazing to see someone like Al coming in like "this is how we do it, this is how we've always done it, and it's gonna be awesome" and he's 100% correct.
Que ponto perfeito do churrasco argentino, parabéns!!!
Work as a grill cook in an Argentinian restaurant in London, also using a 'Santa Maria', all the flavour that the meat gets from it is astonishing, only downside though is the charcoal and wood, always have to keep an eye on it, otherwise you're fucked, but delicious food and even better people.
Oh my goodness, that Argentinean bbq made me drool... yum
Al, that vacio was perfect! But don’t “Mallmanize” it with those roasted pineapples. Only Francis wouldn’t get a life sentence here by doing that 😂

Yeah, as an argentinian one of the things that always ticked me off online was people implying well done meat is dry... But hey, people here eat rare beef too, just not actually raw (pink, not "blue")

Man, this is the first time that the portion of food on America's side is SMALLER than that of the other countries.
The difference is that many people from Argentina would eat that, not just 1 person lol.
Arg here, ive never done an asado for less than 4 people. Usually i invite 10 or more, with a vacío and 2 or 3 other (smaller) cuts.
"Is almost like a brisket, but way better..." 🎉🎉🎉
Thanks for that one Sophia!
Thanks for that all of you, and 4h is the exact time it should go for.
I would have gone tira (ribs) vs tomahawk, vacío against brisket. La tira could be done much juicier, perfectly consistent pink from side to side with the great crust from the wood.
Keep it up Max!
