    I made this years ago and loved it. I let my ginger bug go though. I just started a new one, went out and bought my lemons and limes today and will be making this again. Just here for the refresher on the instructions.

      You’re welcome! I use white vinegar cut with a little bit of water...swish it around lots and rinse very well. It’s way less harsh than dish soap and it doesn’t linger around forever to kill the ginger bug :)

    i saw someone use the small plastic as a test bottle and the others in glass as i dont like plastic becaus eof BPA whatr i am trying to ask and did not make it clear can i do that and have glass there as well and not burp the glass till the plastic gives the signal and is hard then put the lot in the fridge and then when open it will be fine or will they explode the glass ones just want to be surew.

      From what I learned, it has a bit of an electrolyte effect. It keeps you hydrated. But I also know it improves the taste as salt is a flavour enhancer.

    i'm trying this out tonight. It looks so fizzy. how long should it take to ferment at 75-76 degress F?

    Hi could you make this with just lemons 🍋 and would you be omitting the same amount of limes for lemons ?

      Yes, this works with just lemons and even just limes...not enough of a difference in juice to make a real difference. Hope this helps! :)

    Hi I am going to try this later today, I've just bought my limes. Do you stir up your ginger bug before adding it to the juice. I've not had much success, I'm still a newby to all this. My bug is nice and bubbly with a layer of yeast on the bottom.

    can you use your plastic bottle without burping and when it feels hard put it in the fridge and then open it will not blast can i do it like that?

      Yes you can! The plastic is actually better for that reason. When you chill the soda after it ferments, it slows down and should not explode all over the place. Good luck!! 😀

    Why do you recommend stirring the ginger bug with something that isn't metal?

      Metal and fermentation don’t get along...it’s a chemical reaction. It might still work sometimes, but it does have an inhibiting effect. Better to play it safe and not use metal :)

    Hey I tired your ginger beer, it came out very well.. can diabetes drink this ?? Since we add sugar .. I know bug will eat the sugar but still want to confirm can diabetes can drink this ?? TIA

      I’m so happy you enjoyed it! Drinking this soda has much less sugar but I do not know how suitable it is for diabetics :)

    or you can partially boil the water to remove the chlorine right? but chloramine is another thing altogether

      Chlorine get removes when you keep the water for 1 day. Boiled water with the skin to get the flavors.

      @@riju_san yes you can leave it out for 24hrs to get rid of chlorine or i think you can boil it out faster , but there is something called chloramine and idk how that gets removed or if it has any bad effects here, boiling the skin of lime or lemon too long gives bitter or off flavor, better to simmer it a short time to extract the natural flavor that is why its left to the end of the boil and thrown in

    Hi, some sediment appears at the bottom. Can it be used without shaking the bottle.

      Yes sediment almost always appears at bottom of a ginger bug soda...don't bother shaking it just pour off stuff at the top. Sediment is harmless.

      About 1 cup. By adding the remaining 3/4 of the quart of water (cold), the mixture will cool instantly as opposed to heating the whole amount and having to wait for it to cool :)

    There's thin white layer on the surface of my lime soda on day 2. Is that normal? Or I have to throw it away?

      It looks like white film, but it’s actually little bubbles so it’s working! Does it burp when you open it? Give it one more day to get more bubbles then chill it and enjoy! 😀

      @@ICookAndPaint Phew, actually I burped it in the morning but there was no sound and no bubbles (I used swing topped jar). The thin layer just appeared with little bubbles a couple hours ago. I will give it a shot like you said. What do I do next time to make that white layer disappear?

      @@12ndstone Yeah sounds like it can use another day or two of fermenting. The white layer is normal at first but disappears on its own after it’s fully fermented.

      you don't let it ferment long enough to produce any amount of alcohol, after your 3 dayish you want to refrigerate it to stop formation.

      It will last for several weeks in the fridge, but the longer you keep it, the less sweet it becomes. Best flavour will be during first 2 weeks after fermenting (while it’s in the fridge).
