Nice video. Please explain why so many videos are using a cold powdered mix? They simply mix and freeze? Would you know what was in that dry mix because I thought ice cream bases had to be cooked?
Steve Coates it depends on what kind of ice cream you want to make and where you’re from. I heat my mix to pasteurize the egg yolks, make a thicker custard, and slightly reduce the water content. Technically, heating does provide better results. However the difference is likely negligible in an amateur home kitchen.

Even if he gave us the recipe how do we little people who don't have commercial kitchens cut it down to work with our little ice cream machines? That could be a mixture of cornflour and water
Syrup. It would be white if it was starch mixed with water. Corn syrup helps stop the sugar from crystalising
