So many underlying assumptions being made in these marketing demonstrations. Very serious tradeoffs in terms of functionality loss and privileged access models exist. Don't misunderstand what I am saying, I think it is a good approach and the approach will become a serious part of the future service connectivity layer - but before this is even close to production ready for companies and devsecop engineers that care about real security management and control this will evolve a ton. 1 line "demos" in Kubernetes clusters that run on a laptop are not the "next big thing" - they are cool, shiny objects with over hyped marketing.

You are right. The ambient mesh is fairly experimental and needs some serious battle testing before we get it to production. Having said that, I'm super excited by its value prop and feel it will make adoption for new users much easier. The key word here is "new users" who probably haven't adopted Istio yet due to how overwhelming (both resource wise and conceptually) it can be.
