Hi Chef, lovage isn't available in my part of the U.S., would dill or fennel be a good substitute for the lovage oil? That's what a google search suggested 🙂
If you like the taste of these then probably yes
Lovage is more closely related to parsley/carrot/ celery so those greens would be more similar

Hi Chef, why bringing the oil to 80-85 before making herb oil? i never used to warm it up
Then you did it wrong, you have to make it hot to get better color and taste
