    Great recipe! I signed up for news letter and got this recipe! I’ll be making this in the fall here in the US, in Maine :)
    We also make tomato wine from the excess tomatoes from the garden. Now we’ll have a good use for the excess beets.
    For those who are wondering, the recipe calls for an unspecified amount of water, but in the video she says “about 3 pints”. The British pint is 568ml, I’m assuming that’s what she’s using as her pint reference. So that x3 is 1704ml, which comes to about .45 US gallons, so a half gallon (rounded up). I’ll probably scale this recipe up to 1 gallon, I hope this information was helpful!

    I will definitely try this. Trying to re-create all of my grandmother's wine recipes which were lost forever. She used to make 3 or 4 specific ones for Christmas. Beetroot, Pineapple, milk and sour cherry. She used bread yeast and the wine was hazy. But it was delicious. Thanks for the video.

    I have just poured my first glass and it was a beautiful ruby red . I was not expecting it to taste as nice as it did . I have give some away as presents so needed to try it myself in case it was awful. will save the rest of my bottles for a few more months whilst I make another batch .       Hi Lynne, oh I'm so pleased that you like it, it's definitely an acquired taste. Mr J doesn't like it to drink, but loves how it adds a richness to cooking. I quite like the taste of it, although I don't drink alcohol because it makes me feel so poorly.

    I just followed a link from your news letter (1/23/23). I hate beets but I do enjoy making exotic wines so I might just give this a try. It's really sweet of you to taste the wine rather than letting Mr. J take his chances. I know he doesn't care for being on camera much but, since you don't drink wine anymore, it would be interesting to have his opinion.

      I can tell you what he thought of it - It wasn't his favourite, but we both loved it in cooking. It gave food a very rich flavour.

    Thanks for the tips Liz! Now i understand why you should remove the cork and let it sit before serving.
    I have never thought of using beetroots for wine.
    What did you do with what was left of the beetroot pieces? Could you add it to potatoes or swede mash? I guess you could add it to a smoothie or a puree.

    Love the winemaking process!
    I've never considered beet for making wine though. :)
    And, it just doesn't seem right that you aren't able to enjoy the fruits of your own labor. But, Mr. J is very lucky to have a ready supply.

    Interesting! I like the idea of wine from beets :). P.S. There is (I think) simpler (maybe not) way. Take a potato knife and peel skins off. Cut flesh in smaller pieces with a knife. Take food processor and grind all to slices. Than we add +100C boiled water on the top of our collected beets slices. At the next morning or after sitting in the pot 12 hours we simply filter everything out and add yeast. I will do that in the autumn! :) I did try pumpkin wine 3 years ago with fruits together and it is not bad, but pumpkin taste is dominated... Thank you for idea! :)

    I would not have thought of beetroot. Sure looks scrumptious. What other fruits are known to discolor if exposed to light like that?

      Thank you Jonathan, I will try making parsnip wine this year, I have heard that it's very nice. I haven't had any success with elderflower fizz (or non-fizz) and sadly the weather and the birds have left us with no elderberries on our big tree this year :-(

      Hello Lynne, I'm learning that wine can be made from a lot of produce, but I'm also starting to learn which ones taste nice and which ones are just disgusting! Thankfully there are more of former than the latter :-)

      Thanks Fiona, it is definitely worth having a try with homemade wine as it's pretty easy. The wines are usually much sweeter than your average shop bought wine.

      Hi Lori, Mr J says it has the slightest hint of beets and I can't taste them at all, it really is a 'kind of fruity' taste. :-)

      Hi, as I understand it, adding anything woody like cinnamon or cloves could hamper the fermentation process.

    Hello Liz thanks for the beetroot recipe
    I tried to make 30 litres and it is 2 weeks now and I put for secondary fermentation
    so tell me how do I remove the earthy flavour of it? because I can taste and smell it.

      Not sure what you mean by secondary ferment. There will always be a slightly earthy flavour, but it decreases over time. The wine will need to rest in the bottles for at least a year, two years is better, before drinking.

      Hi, I don't measure the alcohol content and I can only go by what other people tell me for strength. Some of the homemade wines are much stronger than you get in a store and others are about the same. Sorry not to be of more help.

    Is there any rush to siphon the wine at all, or can you age it with the sediment and siphon it closer to the time of consuming it?

      It's a good idea to rack it off during the fermenting process to remove some of the sediment. Once you've done that once or twice there is less need to hurry. I prefer to do this at least 6 months before drinking, so that there is time for the last of any sediment stirred up during bottling, to settle at the bottom of the bottle. If you have plenty of demijohns, you could leave the wine in them until you drink it - just check the air stops regularly to make sure that they haven't dried out.

    How many days do we leave it to ferment before drinking? I subscribed to your mailing list but didn't receive complete recipe, it was just ingredients list😥. What is the procedure for fermenting in a glass jar without airlock lid.
    Does the lid need to be airtight? Since other probiotic ferments we cover it loosely so that the bottle doesn't burst open

      I have no idea how to make wine without an airtight lid fitted with an airlock. The wine takes 3 -10 weeks to ferment and the needs racking off at least a couple of times to remove the sediment. Once bottled it needs to mature for 3-6 months minimum, better to leave it at least a year.

    Hi Liz, I am trying Beet root Wine and have found it to be very sweet... and it seemed like it stopped fermenting very quickly. any suggestions..

      Hi Lori, perhaps the yeast died. You could try adding a little more, but be careful as the wine could end up very strongly alcoholic.

    When it is fermenting in the bottle it becomes a little yellowish will it be okay
    It is about 12 days
    And i have put it in a blue colour big bottle

    Why is wine made in a demijohn rather than in a large glass bottle with an opening large enough to get your hand through?

      EcoCentric Homestead you can use a large bottle or a bucket just traditionally demis are used they come in different sizes my largest one is 15 ltrs

      I bought a hydrometer that is short enough to use with the 1 gal glass jars I have. So when outside growing season is done, I will start some real learning to make wine.

      How long did you leave it to ferment? Possibly all the sugar has not been used by the yeast. How long did you leave it to mature after you bottled it, before you tried it.

      @@LizZorab Thanks for such a prompt reply. I fermented it for three weeks and only when the bubbles stopped completely (which means sugar was converted completely). It is still maturing (like me) however i tried after a couple of weeks and found it to be too sweety ...
