Now that’s an authentic rendang. I always check the rendang first at a rumah makan padang. If the rendang is dark and dry, then i know i’ll get real padang food. Orange-light brown, “wet” rendang are fake rendang to me, i avoid restos that serve that type. Also, that woman at the end, i’m guessing she might be a beggar. It was sooooo good never tasted anything like it. Yeah were coming across a lot of people who are nice and friendly then ask for money, then when we say no just get angry and walk off not good! But that's life I guess. Cheers for watching have a top day 🙏
Rendang is popular, so even other Indonesian restaurants or diners that don’t exclusively serve Minangkabau cuisine would have it on their menu. The thing is, they often don’t serve authentic rendang, as long as it’s cooked with rendang spices, they call it rendang. The Minangkabaus are stricter with their cooking method. Half-cooked rendang still swimming in its gravy is called “kalio” and is considered a separate dish. Only properly reduced, darkened, and caramelized rendang is called rendang. This is the case with rendang in Malaysia. They cook some protein with rendang spices and call it a day. Well, it’s their version of rendang and I wouldn’t hold it against them. After all, we Indonesians also love to misappropriate other cuisines (spaghetti ayam geprek, anyone?😅). It just means that if you really want an authentic rendang you have to go to a proper Minangkabau/West Sumatran restaurant. If you’re fine with the Malay version of rendang, that’s OK as well.
And, across West Sumatra there's plenty of Rendang variations. They're made of beef, chicken, eggs, eel, cassava, jackfruit, scallops, lamb, and sometimes just a mixture of different leaves. The color is not always dark, depends on the ingredients as well. However, Minangkabau dishes are not limited to Rendang. Hundreds of different types of food available, and not everything serves in Nasi Padang Restaurant. Often you will find it in small warung, or if you're lucky, some of them only present on special occasions like wedding and traditional cultural event like clan head inauguration (baralek penghulu event) - Minangkabau is a clan based society, encompasses of hundreds of different clans -. Throughout your journey, possibly you could make friends like you did in Malaysia, and I am sure that you will be invited to a wedding ceremony to experience their culture. Cheers.
