    Dhokla’ or ‘Khaman’ are the most popular Gujju snack. Coming from a half - Gujju household. We LOVE this snack. Are you TEAM WHITE OR YELLOW ? We love all !!
    Presenting the most epic & PERFECT Instant Nylon Khaman. I highly suggest follow measurements accurately,
    All measurements are using 240 ml Standard Baking Measuring cups
    Ingredients (This recipe is perfect for a 7 inch mould / thali)
    1 cup / 125 g Besan
    3/4 cup + 2 tbsp / 200 g Water
    2 tbsp Sugar
    3/4 tsp Citric Acid
    1 & 1/2 tsp Salt + 1/4 tsp Turmeric (It is wrong in the video, sorry)
    1 & 1/2 tsp Oil
    1 tsp Ginger & Green Chilli Paste
    1/4 tsp Baking Soda
    1/2 tsp + 1/4 tsp Eno (take both )
    Tadka
    2 tsp Oil
    1/2 tsp Mustard Seeds
    4 to 5 Curry Leaves
    1 Green Chilli
    2 tsp Sugar
    1/4 cup Water (This is very important)
    Garnish - Coriander, Grated Coconut, Pomegranate
    🌟 Vishesh Tippani
    - Pre Heating Steamer is very important before you add eno.
    - Whisk the batter before adding eno really well to make sure it is smooth & this incorporates a lot of air & makes it fluffy
    - After adding eno, whisk and immediately pour in mould and put for steaming. (this has be to super quick
    -When steaming, don’t open the steamer until the khaman is ready
    - Steam on high flame.
    - Both Tadka & Khaman need to be at room temperature when putting tadka.

      I think he accidentally gave instant dhokla link instead of the actual fermented dhokla link. Just Google the correct recipe

    One suggestion for this one. My mother covera the entire lid with a cloth so that the condensed water doesn’t drop on the khaman and allows it to rise fully.

      Entire lid or the mouth of the dish. If the top lid is covered then water will anyway drip on the Dokla. Pls clarify.

    Hi Neha, your khaman turned out really good. How do you substitute the citric acid with lemon juice & does using the substitute give the same results?

    200 ml Pani bohot zada likha aapne .. mein dala tho consistency match nahi hua as you shown.... I think it should be only 100 ml

    You have to stir well and at the end add eno and baking soda and then dont stir hard just 1 or 2 motion of stir...if you stir hard all the bubbly gas effect of eno and baking soda is gone.....and cut little smaller pieces for tadka to penetrate better....try the tadka with more oil and very less water or no water to avoid that extra watery and saugy khaman

    Mam please ye bataiye ki batter dalte waqt mould ko grease karna h ya nahi ??
    & Besan ekdum baarik hona jaruri h ky and khaman banne k baad besan ka taste kyu ata hai ??
    & Eno or sodo dono dalna kyu jaruri h ???
    Or turmeric dalne se red spots kyuu aa jate hai ???

      Red color is liye hota h kyunki eno achhe se dissolve nhi Hua hota, eno ko achhe se crush krke daliyo. 20 min tk cook krna hota h fir toothpick dalkr check krna hota h, agar besan chipk Jaye to cook nhi Hua hota. Mold greese krna zruri h, wrna cook hone k baad nikalne m problem aati h.

      Did you pre heat the steamer ? And also did you open too soon ? Another reason could be not enough gap between Gas / Base of vessel & the Mould in which batter is steaming ?

      @@nehadeepakshah yes I preheated the steamer, didn’t open it too soon also didn’t open in between. No gap between gas and vessel. The follow exact measurements time and method. I made total 5 batch 3 of them turned exactly like yours which i am very thankful for your recipe. But 2 of them sink from center so i just thought to share with you about my query.

      That only happens when you don’t mix it well. So basically when Haldi & Baking soda doesn’t get properly mixed it becomes red on steaming. Don’t worry, it won’t happen here

      You can also make this in the Kadhai, Put a ring mould at the bottom. Water and then place the mould..
