I Teach You The Perfect Steamed Bun Recipe

  • Brown Sugar Swirl Mantou! (Recipe Below)
    Alright everyone, finally an all inclusive guide on how to make the absolute perfect Mantou aka steamed bun. This is a Chinese classic, you gotta learn it.
    Recipe:
    - All Purpose Flour (800 grams) + An extra 100 grams
    - Yeast (8 grams)
    - Water (400-420 grams) + a bit extra later
    - Oil (a splash)
    - Brown Sugar (80 grams)
    - Sugar (35 grams) + a teaspoon
    - Salt (Large Pinch)
    1. Create the yeast water by mixing water, yeast and 1 tsp of sugar into a cup. Mix it and set it aside to let it bloom for a couple of minutes.
    Mix Flour and salt into a bowl, the slowly add in the yeast water in increments while mixing. Once it is combined into a singular piece, begin kneading. Knead by pushing down and out while flipping the dough and turning it 90 degrees for 5-7 minutes. (See video for visual representation)
    2. Shape it into a ball, the dough should be soft with a very slight resistance, lightly spread some oil on it, and cover it well to let it rise for 1-2 hours dependent on temperature.
    3. Take it back out, push the air out and split into two pieces. Leave one piece covered in the bowl for the time being. Add Sugar and 50 grams of flour into the piece and continue to knead until combined. Once combined, knead by really stretching the dough out completely (see video). Shape into bowl and switch it out with the other piece. Repeat, but this time use the brown sugar
    4. Switch again, so this time with the white sugar, dust your workspace with flour and start rolling the dough out into a rectangle sheet, not too thin probably .5cm thickness. Once that is done, dust a layer of flour on top, set that to the side and repeat the same with the brown sugar dough.
    5. Lay one sheet of dough down and drizzle a thin layer of water on top to help the other layer stick. Put the other layer on top making sure that it's lined up, do any clean up work if necessary to ensure evenness. Drizzle another layer of water on top of the new layer.
    6. Roll the dough up tightly and secure to avoid any gaps, once rolled stretch it out into the thickness of your choosing and ensuring that everything is even from left to right. Cut into 1.5 inch width pieces. Place on parchment paper, cover and let rise for another 30 minutes.
    7. The buns should now seem weightless and bounce back with a gentle touch, put the in the steamer and steam for 15 minutes. After 15 minutes, turn the heat off and leave a small gap for the steam to slowly escape from. This will prevent wrinkles.
    DONE! Perfect buns with perfect technique.

    I tried the recipe but for some reason after steaming them they came out very mushy inside and tasted sour :/ where did I go wrong?

      Tasted Sour?? and mushy? Hmm sounds like something is wrong with your fermentation process. Is your yeast expired, or perhaps you used too much. Were you able to let the dough rise into 2x its size successfully? Maybe you didn't knead it for long enough, you must make sure you get to a point where the dough is smooth and well combined. It would be really difficult for a sour aroma to overpower the sweetness due to the amount of sugar, so I really think it's an issue with your yeast.

      @@BaoBeiKH thank you for your advice :) I will try it again! My mom saw the buns and she said I need to let the dough rise for longer so maybe that’s why!

      @@lunaliu786 ur very welcome, that makes lots of sense as well! Make sure ur dough looks massive and risen before you continue. Especially during these winter times, don't be afraid to let it rise for 3 hours, cold weather really hinders the process. You can also leave it in the oven to let it rise and a very very low temp like below 130° f
