Fun tip from a former beekeeper: before you use your knife to cut the honeycomb, heat it up! The heat melts the wax as you cut and allows for a cleaner cut! You can also buy hotknives for this very thing, back when I was younger we would just hold the knife over an open flame for a bit before uncapping and/or cutting the comb!
Actually, you shouldn't even use anything that's metal or heated up on honey, it'll destroy the beneficial properties of the honey like all the vitamins it has, etc.
