Now that I can turn my oven on again, this sounds just right! It made me think of Zuni Cafe's bread salad and maybe a radicchio salad which all in is still a pretty low effort/ high reward meal.
Roasted root vegetables are really nice, but really even a simple crisp salad with chopped veg would work great. Mashed potatoes, creamed corn, braised green, you name it! So many variables
Nice recipe , I give the breast to the grand children & I just want the thigh/leg connected . I scratch the Rosemary as it overpowers my palate & everything taste like pine ,, but I do use poultry seasoning

The leg is always my favorite as well. Have you tried using thyme instead of rosemary? Just as floral without the pine aroma.
