My ‘go tos’ are the Rostropovich-Richter and Wang-Harrell performances. That is a very high bar to reach. These two do a wonderful job! She’s a little sharp on that end-of-phrase E natural, but so what?!
With regard to the instruments themselves, and how you choose the best: Fritz Kreisler said you don’t ‘make a choice when face to face with beauty’ or words to that effect!
