Chris here man. I'm from Aruba and about 50 years ago, my sister cooked this meal for the first time at home. She just learned to cook it at a culinary school. I love that meal but with the years I forgot the name. She told me the name few days ago. Sounded like pilow, and since she mentioned Caribbean island, I thought well, Chris should have a video. She cooks it mixed. Pigtail, chicken and smoked sausages. Now I have the real thing. Thank you Chris. You have a new Caribbean friend from Aruba.

I added avocado, a green salad mad from lettuce I grew myself, and his favourite beer, and a glass of mango juice. He LOVED EVERYTHING!!! He praised me over, and over again. I even felt that it was the best PELAU, I have very made. I want to thank you for the input you had in my day. Your efforts in sharing Caribbean Recipes, provided pleasure to my family this afternoon. The last time MY UNCLE was here I made macaroni pie along with stew chicken and a few other items. He is coming back next Sunday, and I will be looking for more of your videos to prepare for the afternoon. Now if I can only learn how to successfully make edible items with flour, (like Bread, Fry Bake, or Roti), I would be over the top!! Lol! Thank you so Much!!!

Im from the Caribbean and my dad luv making pelau on Sundays. I did not know how to make this until this video, Its easier than I thought, loved how you made it so easy to understand. Every island has its own way of cooking pelau by using different seasonings. Your seasonings are familiar to me so Ill use them. Thanks for the vid. Just wanted to thank you so much for this recipe! Its absolutely perfect... Every time I've made it I can't believe it came from my hands! Best recipe!
Just had chicken pilau( East African recipe). Very delicious! I used long grain basmati rice, chicken. I used purple cabbage, carrots, French beans, spring onions. For the spices I used pilau masala, Cayenne pepper, white pepper, mixed herbs, garlic, ginger, red onions, tomatoes, thick coconut milk. Method more or less the same as yours except I added thick coconut milk at the end, turned the heat really low, put the vegetables on top, put a lid on and let steam. Last minute stirred lightly to mix the vegetables in. Vegetable must retain firmness and not be mushy and overcooked! Bon appetite!
This is the real pelau, made with love, exactly as my Momma made it. Gradually this rich culture is being lost, forgotten or ignored. Good work Bro! To those not born on one of the Islands, you can follow this recipe and fool everyone.

This was amazing! My family really enjoyed it and I will make it again for sure. I used a deeper pot and got a ton of liquid from the chicken so ended up only adding the coconut cream/milk for liquid, and it worked! I was sooo happy 😊 I have learned so much from you and have recommended you to family in the US. Thank you.
Hey Chris you are amazing, I made this tonight followed every step and it was awesome...I'm of Irish decent and usually make dishes for my hubby who is Jamaican, I do mostly everything from oxtail to cow foot soup, we both love pelau and it's usually his friend that makes it for us, well from now on it will be me!!! Hey Collen hello!!.This is just a tip from a Trini you can use some pre cooked blackeye peas it goes wonderful with the pelau..You pre cook it and add it as substitute for the pigeon peas .Its wonderful. Especially when you got some home made peppersauce..Pelau also goes great with beef and pigtails.
Always use "Long Grain Parboiled Rice", not regular white rice. The regular will be too starchy & sticky, thus spoiling your pot. Just a tip for those making this dish :)
SimplyMJ.. That's not Trinbagonian pelau no peas that is rice & peas pelau is just browning your meat as dark or lite as u want i grow up on that kind of food peas & rice and pelau is 2 different dishes.

Chris, thanks for the video. Although I have been making this for decades, it's always good to look at your videos. When I use fresh pigeon peas, I stew them first and then add them in when I am about to put in the rice. I always put pumpkin in it and, of course, the boiled pigtails, depending on my guests.
Chris I must say my husband and I tried this dish without the golden ray, it was THE BOMB we are actually in Northern America so we could not find a store that carried it. I will be trying a lot of your dishes, My husband and I are tired of the same old thing so its nice to try something different for a change.. I love this video and recipe. It is so easy to follow and the result was more than delicious. Authentic. Easy to get ingredients and easy to make recipe. 2 thumbs up! I simply love it!
I made this with stew beef recently. I cut the beef in very small pieces, didn't have time to marinade. Put beef in pressure cooker uncovered to let the natural juices and water evaporate first then added salt to taste and the water and pressured for 12 mins. Then I proceed with the recipe as a base guide using cassereep instead of brown sugar. Added green and red peppers, forgot to use carrots. It came out delicious
Thx for your feedback. Not sure how else to pronounce pelau. I did mention that parsley, thyme etc is normally added. Cassareep in not added to traditional way of making pelau.. that is a preference thing I'm sure you like using. To be honest, I've never seen it being used in pelau. When cooking I try to satisfy myself and those who I'm cooking for, so the colour is exactly how my daughters like it, so too the consistency of the rice. I realize that no 2 cooks will ever cook the same. Thx Again.

I am a Trinidadian and this is exactly how I make my pelau, it's awesome! The coconut milk really gives it a much better taste!

simply para boil heavy my stomach can I use like Jasmine rice ?

Not everyone wants to eat white rice. Brown basmati or red jasmine or even black rice could work fine as well, it's all a matter of health preference.
