  • CHICKEN WITH TOMATO CHERRY AND BASIL
    INGREDIENTS
    4 chicken fillets, about 1 kilogram
    1 kilogram cherry tomatoes, red or mixed colors
    6 small bell peppers of various colors
    1 onion
    2 cloves of garlic
    1 lemon, zest and juice of half
    1/3 bunch of parsley
    1/2 bunch of basil
    3 sprigs of thyme
    salt, pepper, oregano
    100ml olive oil
    a little feta cheese for serving, or any cheese you like (optional)
    METHOD
    1. Season the chicken fillets with salt and pepper.
    2. Heat olive oil in a pan over high heat and sear the fillets until they have a nice color on both sides. Remove them without fully cooking, just to get some color.
    3. In the same pan, add the onion, garlic, thyme, and sauté for 2 minutes until they become translucent. Then add the cherry tomatoes, bell peppers, lemon zest, lemon juice, parsley, basil, salt, pepper, and oregano. Sauté for 2 minutes, then return the chicken fillets to the pan. Cover and simmer for 25 minutes until the sauce thickens and the chicken is cooked through. If desired, add 5 more minutes before the end with 150 grams of whole cherry tomatoes.
    4. Serve topped with feta cheese, fresh basil leaves, olive oil, and freshly ground pepper.
