      He also chooses the simplest flavor combinations. Like would you rather have lobster with swiss chard and wasabi or lobster with garlic butter and lemon. Sometimes the obvious answer is the right one.

    Have only seen this episode, but this truly lives up to its Game Changer name. Not only feasting on the local cuisine, but also making it, and giving back to the local community as well. They're still at 2.4m subscriber in 2021, and it is criminally underrated imo. More power to you lads!

    Were the lobsters alive when you cooked them? I remember seeing Gordon Ramsay specifically mention to make an incision near the head of the lobster to kill it instantly so that it isn't boiled alive, as is the practice in many places. I don't have experience cooking lobster so I have no idea if this is necessary or not; ethically speaking.

      Jamie’s was in the freezer which puts them in a coma like state so they won’t feel

      I cant say this is true or not but that is for the non chilled lobsters. The lobster where they are swimming around in tanks are very much alive but the pre chilled are in a slowed matabolism/ coma or whatever state.

      Jamie shocked his by freezing them, afterwards, the high heat of the boiling water will instantly kill them in a fairly humane way.
      Barry, on the other hand, steamed his lobsters while they might have still been alive, essentially putting them through hell.

      Lobsters dont have a nervous system so they dont feel any pain. Its not necessary but something think it's kinder.

    They should work together to the THE ULTIMATE lobster roll. Steamed lobster and only use the claws. Use lobster brown butter. Then use Jamie's baked lobster preparation. Maybe add in the chard from Barry as well.

    I've lived in Maine my entire life and a lot of times the state feels somewhat forgotten, I loved this video for not just highlighting the amazing food in this state but also the local people and businesses that are in Portland and Maine.       John Pankhurst lobsters start decomposing as soon as they are dead. And if you are given a lobster that was cooked after it was killed /dead it will make you very sick or could even kill you

      It's fine to kill it right before cooking. Freezing it can kill it, which I think Jamie did (potentially not for long enough).

      Aside from being inhumane, doesn’t it also make the meat tougher if the lobster is stressed? I heard that’s true for fish as well, not sure about other animals.

      @@gavinmathison9532 the reason to cook shellfish alive is because of the bacteria in it when it dies. The freezer kills the lobster painlessly and it keeps the bacteria from replicating. Ask yourself if you have a choice, would you rather freeze to death or be boiled alive?

    Ben is sooooo lucky getting to sample these two amazing creations! Darn I genuinely cannot decide which one looks yummier but looks-wise, I prefer the toasted brioche to the toasted hot dog bun....so....Barry wins for me...wanted to give him a hug at the end when Ben announced the winner, he looked so disappointed!

    Genuinely surprised you guys didn't kill the lobster quickly before you dropped them into the steamer.
    Each to there own but I find it a bit more humane, especially if you dont ice them first to knock them out.

    Random question did Barry kill his lobster by sticking a knife in it(I’ve forgotten the technical term) before steaming it or did he freeze them like Jamie :)

    Kinda wonder what happened to the wasabi vinaigrette. Barry said it tasted vile but would work well together, Ben didn't mention it. Also agree that Jamie wins, felt like Barry was trying too many things at once because he thought they would be innovative ideas without thinking about if those things would work together and he had way too easy of a time getting ingredients.

    I love the battles the best but I miss the weekly ones with a brownie league, costumes and sabotage lol

    Ok so that may be a stupid question, but wouldn't it be more humane, to kill the Lobster before boiling it? Or maybe not while boiling, since that should be a rather quick death. But I assume that especially when steaming, it'd be better to kill the lobster before putting it in the pot. Or is there a reason not to do that/ why it's not necessary?

      I'm not condemning anything I am just curious. Germany isn't known for its lobster population so I never had the chance to cook one, but I'd like to know if I ever get the chance. Because from what I've seen a knife in the back of the head straight down kills it without loosing much flavor. Or is that wrong?

    Would love to see things like that on a regular basis.
    Are you also thinking about compensating your flight emissions? Considering the times we live in, and the fact that you are role models to this community, this could absolutely make an impact.

      @@atuma I'm sorry for my snarky remark but have been seeing so many negative remarks towards people in the public domain know matter what good they were doing or just because the are putting themselves out there for our entertainment, there is always comments that look to tear down or expect more from public figures than they do themselves you know the double standard and I think today I had reached my fill of the negativity and over reacted, so my apologies.

      @@rotties-rules Thank you for your response, I really appreciate it. Yeah, I often wonder how it feels like to be in the public eye and having people project their stuff. In my case, projecting worries about the environment.
      But I imagine even "positive projection", which is so common on this channel, can be quite tiring: People thirsting for the guys, assuming sexual identities, commenting on physical traits... (and I think I have been guilty of all of these). I wonder how you can read all that and still be sane.

      @@darklordkitzu what's with the eye rolling? It's common sense. No one is saying not to eat them, no one is being a militant vegan type; just kill them before cooking them. Gordon Ramsay does it - quick knife incision to the to of the head, 5 seconds work. Why wouldn't you do that?

    I’ve loved all of you and your videos for a long time now, and I’m so happy you enjoyed my home state - just wish I had known you were here and I would have shown you all the rest Portland and the rest of the state has to offer. And thank you so much for shining a spotlight on Wayside and how Mainers look after each other. Food videos are a lot of fun, but please keep featuring food organizations helping the communities you visit.     I'm a bit annoyed that Barry didn't specifically say to kill the lobster before steam it. Although looked dead should be pointed out to people wanting to mimic the recipee. Otherwise looks delicious

      I thought they looked alive. Very poor if so. Even Gordon Ramsay kills then before cooking - knife to the top of the head.

      Jamie made point to show that they put the lobster in the freezer for half an hour. That's why Barry's looked groggy because they both did it. Why mention it twice?

      There isn't even a consensus about if lobsters feel pain. Second it's better to boil them alive for health reasons.
