Nick, if you go into the audio settings and switch on upshift chimes it makes timing upshifts waaaay better, plus its what they actually use IRL in the car.

you need to be more smooth on the steering and the throttle when exiting corners. then you won't have those snaps of oversteer :)

Try and avoid the bumby Kerb on the exit of the last 2 corners, you can gain more by just tapping the italian stripes or even not using it at all.
