I find self clean to be a completely useless feature, I clean my blue star oven with easy off in 20 minutes without using a ton of energy and heating up the kitchen. I thought I would for sure miss having self clean as I’ve had in previous less expensive ranges but it really hasn’t been an issue at all. There are many great ranges but the reason I chose blue star is for it’s simplicity and closest resemblance to a true professional range.
Self-clean is also not a great feature for longevity. It's basically an oven stress-test, running everything maxed out to the max for extended periods of time. It's hard on the seals, it's hard on the burners/heating elements, it's hard on the convection hardware. It's basically the cooking equivalent to redlining a car at max RPMs for two hours. If you want your oven to have less service issues, don't use self-clean.
Important factor to consider before buying an induction stove: burner size. It matters--A LOT. On most lower-end induction stoves the largest burner you'll get is 6". Since induction burners only heat the area of the pan making contact with the burner surface, this means trouble for 12" skillets, which typically have a 9" bottom diameter: the central area of the pan will heat nicely, but the outer area will not. If you want to get 12" burners, count on spending big bucks, like $5,000 and up. Or several times that for a Wolf.
I bought my blue star for the open burners and expected the oven to be acceptable but the oven does a superb job and the convection is almost like having air fry. It definitely exceeded my expectations. It’s definitely a range that is serviceable and not meant to be thrown away .
The duel fuel rangers used to be advertised as more controlled baking temperatures. They also have more expensive parts to break, as in control boards. I assume gas ovens need to add air into the box since gas needs oxygen to burn. This is also why they bake dryer. Moisture is a by product of burning natural gas. A gas oven should be more dependable over the years. There is a reason he only gives out service stats for the first year. I also believe but may be wrong, that commercial gas ovens used to have a 2 stage burner. This would have two flame settings to keep a more consistantly heat.
Looking at ranges for my kitchen remodel and my limit is a 30". Really like the Thermador so far, but you mention the PRG304WH has wifi capabilities. I don't see anything on that on their site for a 30" gas range. Am I missing something? Looking for a 30" with infrared broiler and the one that will tell me what temperature the oven is.
They do not offer Home Connect in a 30" platform right now. Smallest they offer it in is a 36". That said, Thermador is still a great recommendation for what you are after.
Love your videos. I'm interested in buying a 30" Thermador Pro Harmony all gas range with 4 burners. The problem is that I have a small New York City, 7' x 11' galley kitchen with an exhaust fan/microwave that doesn't vent outside, but the stove would be 3' away from the window, which does have a built in exhaust fan that works pretty well with a conventional stove. Is this a problem?
In the state of Massachusetts it is... and I'm betting it is there as well. Luckily, Thermador makes a 30" 5-burner unit that they underpower which allows for it to be rated to work in such a space. So if you are adamant about having Thermador in your space the 5-burner would be the way to go.

We recently looked at a Fulgor Milano Sofia, which seemed to have a nice array of features - high output burners, true (dual) convection oven, easy closing door, cool door glass. Any input compared to the ones here?

Kucht? Looks solid with 4 year warranty and esthetic but I've heard concerns about gas leaks and inability to service

One issue that I can see, the 30" Thermador Ranges don't have wi-fi so it seems silly to list it as a feature in the best 30" range guide.
To some of us that's more of a plus than a minus.
