For those like me who had troubles doing this: it's absolutely vital to do the pen-tool path WITH the text layer selected! If you look closely, he selects it at the beginning and no second layer (the one of the pen tool trace) appears. It all "belongs" in the text layer, which automatically becomes the mask of the stroke when you apply the Generate Stroke effect. Doing it separately (first a text layer, and then a pen tool layer) won't work!
I am so close to getting this right, when he gets to the part where you animate it i dont seem to have that worked out at the last moments, i do all the steps and then it doesnt change anything on the screen when its being played to "reveal"

How do you export your signature with a transparent background for overlay??
Search for render with alpha layer to keep the transparent background. Works in most softwares, if not in some probably is RGBA (RGB+alpha)
