  • Day 3 of sneaking veggies into my toddlers food! She wasn’t a fan so now I’m stuck with 10 more to eat for myself. These muffins were actually so soft and good so I don’t mind having to eat them. What should I try next? 🥲
    🧈 SAVORY VEGETABLE MUFFIN 🧈
    Ingredients
    1 medium Zucchini, grated
    1 cup frozen peas and carrots
    1 cup grated cheese (I used Colby Jack because that’s what I had)
    1/2 cup Milk
    1/4 cup cottage cheese
    1/4 cup Olive Oil
    2 Eggs
    2 cups flour
    3 tsp Baking Powder
    Steps
    1. Mix all wet ingredients together
    2. In a separate bowl, mix flour and baking powder
    3. Slowly whisk flour into the wet ingredients
    4. Bake at 350F for 25 minutes!
