In Virginia USA where I grew up my grandparents and other old folks in our community made “hog head cheese”. It was made of boiled scraps of pig, including the feet and the head and the fat from the cooked meat provides a jelly like binding for the cooked scraps. Some called it souse meat. That was a better name because it wasn’t cheese at all and contained NO dairy. Some say that it was developed out of our enslaved ancestors ingenuity, who had to make do with what their enslavers threw away to feed their families. But I don’t believe that. I now believe, after listening to Joyce and others from the continent talk about the village tradition of eating everything, that souse/hogshead cheese was a holdover from our African ancestors who believed in not throwing away anything and cooking all parts of the whole hog that was killed to feed the family and honor the animals sacrifice.
In my area of the world we call chapati "Indian fry bread", it is a great dessert with butter drizzled over it and then shake some cinnamon sugar over top, yummy

Hi guys! Your outdoor kitchen is coming together well. I love the new table for food preps. May i suggest you have your construction people to add a waterproof solid surface, to protect the top? You could use butcher block, a small piece of granite, tile, stainless steel, or a man-made solid surface used for kitchen countertops. I love watching you cook together as a family. Hello Joyce, Peter and Children. I really love it how you just estimate amounts when you’re cooking. I’m not at that stage and need a recipe the first time I cook a dish. If I don’t have a recipe I’ll likely just ruin the meal and waste ingredients.

The chapatis You can roll veggies and cooked meat in them roll and eat Or you can put cabbages and carrots with chicken roll eat like what we call egg roll
Naw joyce here in the USA the head is waste its thrown away They do eat the feet tho I don't they eat the gizzard liver other parts but some in chicken is waste
That's not roti, it is chapati, coz it was originated from India to kenya, chapati was not Kenyan food, we just got it from Indians. That's why even Indians they call it chapati. Roti is the same as chapati but it's made without oil and they make it very thin, put it in fry pan then in then in direct fire for few seconds it's done.
